Peanut butter, chocolate fudge mislabeled as a brownie. Do I need to continue?
Hey y’all! I am sitting in my dorm and as usual bored out of my mind…when is college going to get hard? I’m waiting…still waiting…bring it on…where are you oodles of homework?… come out, come out wherever you are… Don’t get me wrong…I’m fine with no homework, but I would just like to know where all that talk of no sleep during college came from. I have never slept more in my life…my body is actually rejecting sleep now… I can’t sleep more than 8 hours a night anymore because I’m just too rested.
Well anyways my boredom gives me time to chat with you… who are you anyways? When I write for my blog, I mostly feel like I’m talking to the great dark hole that is the internet. I seriously don’t bite…unless you have one of these fudgey brownies…I am a starving college student after all.
Peanut Butter. Chocolate. Fudge.
Need I say more? I mean I guess there is the added bonus of being gluten-free too.
WARNING: Only for chocolate lovers.
These brownies almost can’t be called brownies. They aren’t the denser cake texture that you get with brownies. It is like biting into a piece of peanut butter chocolate fudge. They are so outrageously rich that I can’t eat more than half of the size shown in my pictures at one time. It’s sort of like the Cheesecake Factory….you order a piece of cheesecake, eat 5 bites, can’t handle another mouthful of the creamy heaven on your plate, get a to-go box, and eat a couple of bites each day for the rest of the week. Maybe I should call them “two sitting brownies”…it certainly is shorter…but then again I could just cut smaller brownies… hah who am I kidding?
These brownies are super simple to make and when you drizzle chocolate and peanut butter in perpendicular directions, they are beautiful!
I used two ziplock baggies and snipped a corner off to get neat drizzling, but you could also just use a spoon! I microwaved chocolate chips until they were completely melted and just microwaved the peanut butter for about 30 seconds.
So easy and so delicious!!
…and voilà!
- ½ cup butter
- 2 cups chocolate chips
- ½ cup creamy peanut butter
- 4 eggs
- ⅓ cup white sugar
- 2 teaspoons vanilla
- ⅓ cup unsweetened cocoa powder
- ¼ cup chocolate chips
- ¼ cup creamy peanut butter
- Preheat oven to 300°F.
- Line an 8x8 inch pan with foil and then grease it with cooking spray.
- Microwave butter to melt it.
- Add the 2 cups of chocolate chips and the ½ cup of peanut butter into the bowl with the butter.
- Microwave the mixture for 1 minute and then 15 second intervals until completely melted, stirring between microwaving.
- Whisk in eggs, sugar, and vanilla until smooth.
- Whisk in cocoa powder until smooth.
- Pour batter into the pan.
- Bake for 40-45 minutes.
- Let cool.
- Melt the chocolate chips completely. Drizzle over brownies using a piping bag, a ziplock with a corner clipped off, or a spoon.
- Heat the peanut butter for 30 seconds. Don't melt it, just soften it. Drizzle the peanut butter in the same manner as the chocolate but perpendicular to the chocolate drizzle.
