Fluffy peanut butter cookies coated with sugar and a hit of chocolate!
The holidays are winding down and my waist band is moving outwards. A small update on my holiday stats…
Number of Peanut Butter Kiss Cookies eaten: 15… today
Number of times been to yoga: 2
Collective times fallen on face: 20…I’ve decided I’m not cut out for exercise. Must focus on talents such as cookie eatin’ in the New Year.
Number of times out of sweatpants: 4
Number of naps taken: 13
…all in all a productive holiday thus far.
Okay I know about a million other blogs have posted a similar recipe this past week for these cookies. But none of those other bloggers share the same level of love that I do for these cookies. I inhale these babies. They are so fluffy! It’s like biting into a cloud of peanut butter. How can you go wrong with peanut butter and chocolate coated in sugar? Peanut butter and chocolate were a combination made to be… if you disagree, I probably can’t be friends with you.

- 1¾ cup flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup shortening
- ½ cup creamy peanut butter
- ½ cup granulated sugar + ¼ cup for coating
- ½ cup brown sugar
- 1 egg
- 2 Tablespoons milk
- 1 teaspoon vanilla
- ~26-30 Hershey's Kisses, unwrapped
- Preheat oven to 375°F and lightly grease 2 cookie sheets.
- In a small bowl, combine flour, baking soda, and salt. Set aside
- In another bowl with an electric mixer, cream shortening and peanut butter together.
- Add sugar and brown sugar and mix well.
- Add egg, milk, and vanilla and beat well.
- Add flour mixture and mix until completely combined.
- Roll dough into about 1 -1.5 inch balls and then roll in the extra ¼ cup of granulated sugar.
- Place on the greased sheets and bake for 8 minutes.
- Remove from the oven and press the Hershey's kisses into the center.
- Put back in the oven for 2 minutes.
- Let cool for 2-3 minutes and then move to a cooling rack.
